淀粉基膳食食品的设计及其结构研究 Review

摘要:

碳水化合物是食物的主要成分之一,也是人类膳食的主要能量来源,通常包括糖类、淀粉和纤维。在这三大来源中,淀粉是储量最丰富的碳水化合物之一。研究淀粉不仅可以加深人们对淀粉在人体中的功能的理解,而且有助于开发设计新的淀粉基膳食食品。本文首先综述了国内外对快消化淀粉(RDS)、慢消化淀粉(SDS)和抗性淀粉(RS)等的最新研究进展,然后介绍了淀粉基膳食食品消化率的体内和体外测定方法。在此基础上,提出了通过直接添加变性淀粉或改变加工条件来设计新型淀粉基膳食食品的研究策略。最后,本文对淀粉类食品未来的研究方向进行了展望。

Interest in understanding the digestion behavior of starch in the presence of dietary fibers is growing due to the ability of dietary component to control the release and absorption of glucose. This presents an outstanding opportunity to improve the quality of food products by incorporating dietary fiber into starchy food products. The physicochemical properties of different fibers and their behavior in the gastrointestinal tract (GIT) differ. To test the efficacy of these different fibers on starch digestion, static in vitro digestion models under conditions that mimic the human GIT are frequently used. Indeed, many efforts have been committed to the development of various static in vitro protocols for starch digestion. Though not considered as the gold standard in digestibility studies in food science and technology, static simulated models provide a useful alternative to in vivo techniques for rapid screening of the digestibility of food products under conditions that simulate the human GIT. This review presents the current status and development of digestion techniques for simulating digestion conditions in the human GIT, with particular interest on starch digestion in the presence of dietary fiber in the three phases of digestions including the oral, gastric and the intestinal steps. This summary can benefit investigators in developing static in vitro digestion models designed to simulate starch digestion with relevant values of the quantifiable parameters, including pH, enzymes and simulated digestive fluids.

J-shaped association between dietary zinc intake and new-onset hypertension: a nationwide cohort study

摘要: We aimed to investigate the relationship of dietary zinc intake with new-onset hypertension among Chinese adults. A total of 12,177 participants who were free of hypertension at baseline from the China Health and Nutrition Survey were included. Dietary intake was assessed by three consecutive 24-h dietary recalls combined with a household food inventory. Participants with systolic blood pressure 140 mmHg or diastolic blood pressure 90 mmHg or diagnosed by a physician or under antihypertensive treatment during the follow-up were defined as having new-onset hypertension. During a median follow-up duration of 6.1 years, 4269 participants developed new-onset hypertension. Overall, the association between dietary zinc intake and new-onset hypertension followed a J-shape (P for non-linearity < 0.001). The risk of new-onset hypertension significantly decreased with the increment of dietary zinc intake (per mg/day: hazard ratio (HR) 0.93; 95% confidence interval (CI) 0.88–0.98) in participants with zinc intake < 10.9 mg/day, and increased with the increment of zinc intake (per mg/day: HR 1.14; 95% CI 1.11–1.16) in participants with zinc intake 10.9 mg/day. In conclusion, there was a J-shaped association between dietary zinc intake and new-onset hypertension in general Chinese adults, with an inflection point at about 10.9 mg/day.

This study compared proteome profiles and morphological changes of rat jejunum in response to different dietary proteins. Fifty male Sprague-Dawley rats were fed with casein (control), and isolated beef, pork, fish and chicken proteins for 14 days. Proteome analysis, histological observation and PEPT1 quantification of the jejunum were performed. The results indicated that rats fed with chicken proteins had higher PEPT1 mRNA and protein levels (P<0.05) but lower villus height and ratio of villus height to crypt depth (V/C ratio, P<0.05) than those fed with casein and pork protein. Label-free LC-MS/MS indicated that, as compared to casein, intake of chicken protein can regulate oligopeptide transport mainly by upregulating PEPT1 protein expression and reducing dipeptidyl-peptidase activity related to biological oxidation, and can reduce oligopeptide absorption capacity by regulating Hippo signaling pathway. Although intake of beef and fish proteins had no significant effect on PEPT1 expression, they altered several signaling pathways.

As muscle activity during growth is considerably important for mandible quality and morphology, reducing dietary loading directly influences the development and metabolic activity of mandibular condylar cartilage (MCC). However, an overall investigation of changes in the protein composition of MCC has not been fully described in literature. To study the protein expression and putative signaling in vivo, we evaluated the structural changes of MCC and differentially expressed proteins induced by reducing functional loading in rat MCC at developmental stages. Isobaric tag for relative and absolute quantitation-based 2D nano-high performance liquid chromatography (HPLC) and matrix-assisted laser desorption/ionization time-of-flight/ time-of-flight (MALDI-TOF/TOF) technologies were used. Global protein profiling, KEGG and PANTHER pathways, and functional categories were analyzed. Consequently, histological and tartrate-resistant acid phosphatase staining indicated the altered histological structure of condylar cartilage and increased bone remodeling activity in hard-diet group. A total of 805 differentially expressed proteins were then identified. GO analysis revealed a significant number of proteins involved in the metabolic process, cellular process, biological regulation, localization, developmental process, and response to stimulus. KEGG pathway analysis also suggested that these proteins participated in various signaling pathways, including calcium signaling pathway, gap junction, ErbB signaling pathway, and mitogen-activated protein kinase signaling pathway. Collagen types I and II were further validated by immunohistochemical staining and Western blot analysis. Taken together, the present study provides an insight into the molecular mechanism of regulating condylar growth and remodeling induced by reducing dietary loading at the protein level.

This study aimed to explore the association of maternal depression with nutrient intake, growth, and development of preterm infants. A cohort study of 201 infants was conducted in Beijing. Based on the gestational age of an infant and status of the mother, the infants were divided into four groups: non-depression-fullterm (64), non-depression-preterm (70), depression-fullterm (36), and depression-preterm (31). Data on sociodemographic characteristics, nutritional intake, growth, and developmental status of children at 8 months (corrected ages) were collected using a quantitative questionnaire, a 24-Hour Dietary Recall, anthropometric measurements, and the Bayley-III scale. A multivariate analysis was used to evaluate the effects of maternal depression and preterm birth on infant growth and development. The energy, protein, and carbohydrate intake in the depression group was lower than the recommended amounts. The depression preterm groups indicated the lowest Z-scores for length and weight and the lowest Bayley-III scores. Preterm infants of depressed mothers are at high risks of poor growth and development delay.

从我国人民膳食结构演变谈三元结构农业的内涵性改造

摘要:

由于近20年来全国人民膳食中的肉、蛋、奶比重的不断增加,已经在减缓我国人民对口粮的压力方面发挥着巨大作用。为了争取我国人民对动物性蛋白质的消费量达到发展中国家的先进水平,预计在中长期内,我国饲用蛋白质资源将缺口一半;其中赖氨酸缺口更大,走工业化的途径,在入世后很难形成竞争性优势。三元结构农业的内涵性改造,是结合国情国力解决饲用蛋白质资源不足问题的有效途径。

Performance of fiber reinforced clayey sand composite

摘要: Soils and their related behavior have always been the subject of many studies. Recent researches show some interests in investigation of inclusion of randomly distributed fiber in soil. This study focuses on effect of fiber inclusion on the strength and other parameters of clayey sand composite material. First part of this study is related to effective parameters on strength of the clayey sand composite with using natural fiber and plastic fiber and different fiber contents and length. Triaxial consolidated undrained (CU) tests were carried out to investigate behavior of the composite under different condition. The fiber percentage varied from 0% (for unreinforced samples) to 4% and fiber length varied from 8 to 25 mm. The fiber length and fiber content found to play important rule on the strength of fiber reinforced composite.

Mechanical properties of steel, glass, and hybrid fiber reinforced reactive powder concrete

摘要: This study examines the properties of fiber-reinforced reactive powder concrete (FR-RPC). Steel fibers, glass fibers, and steel-glass hybrid fibers were used to prepare the FR-RPC. The non-fibrous reactive powder concrete (NF-RPC) was prepared as a reference mix. The proportion of fibers by volume for all FR-RPC mixes was 1.5%. Steel fibers of 13 mm length and 0.2 mm diameter were used to prepare the steel fiber-reinforced RPC (SFR-RPC). Glass fibers of 13 mm length and 1.3 mm diameter were used to prepare the glass fiber-reinforced RPC (GFR-RPC). The hybrid fiber-reinforced RPC (HFR-RPC) was prepared by mixing 0.9% steel fibers and 0.6% glass fibers. Compressive strength, axial load-axial deformation behavior, modulus of elasticity, indirect tensile strength, and shear strength of the RPC mixes were investigated. The results showed that SFR-RPC achieved higher compressive strength, indirect tensile strength and shear strength than NF-RPC, GFR-RPC, and HFR-RPC. Although the compressive strengths of GFR-RPC and HFR-RPC were slightly lower than the compressive strength of NF-RPC, the shear strengths of GFR-RPC and HFR-RPC were higher than that of NF-RPC.

Experimental and parametrical investigation of pre-stressed ultrahigh-performance fiber-reinforced concrete

摘要: In this study, ultrahigh-performance fiber-reinforced concrete (UHPFRC) used in a type B70 concrete sleeper is investigated experimentally and parametrically. The main parameters investigated are the steel fiber volume fractions (0%, 0.5%, 1%, and 1.5%). Under European standards, 35 UHPFRC sleepers are subjected to static bending tests at the center and rail seat sections, and the screw on the fastening system is pulled out. The first cracking load, failure load, failure mode, crack propagation, load–deflection curve, load–crack width, and failure load from these tests are measured and compared with those of a control sleeper manufactured using normal concrete C50. The accuracy of the parametric study is verified experimentally. Subsequently, the results of the study are applied to UHPFRC sleepers with different concrete volumes to investigate the effects of the properties of UHPFRC on their performance. Experimental and parametric study results show that the behavior of UHPFRC sleepers improves significantly when the amount of steel fiber in the mix is increased. Sleepers manufactured using UHPFRC with a steel fiber volume fraction of 1% and a concrete volume less than 25% that of standard sleeper B70 can be used under the same loads and requirements, which contributes positively to the cost and surrounding environment.

Studies of fiber-matrix debonding

摘要: In this paper, the debonding of a single fiber-matrix system of carbon fiber reinforced composite (CFRP) AS4/Epson 828 material is studied using Cohesive Zone Model (CZM). The effect of parameters namely, maximum tangential contact stress, tangential slip distance and artificial damping coefficient on the debonding length at the interface of the fiber-matrix is analyzed. Contact elements used in the CZM are coupled based on a bilinear stress-strain curve. Load is applied on the matrix, tangential to the interface. Hence, debonding is observed primarily in Mode II. Wide range of values are considered to study the inter-dependency of the parameters and its effect on debonding length. Out of the three parameters mentioned, artificial damping coefficient and tangential slip distance significantly affect debonding length. A thorough investigation is recommended for case wise interface debonding analysis, to estimate the optimal parametric values while using CZM.

Time- and temperature-dependence of compressive and tensile behaviors of polypropylene fiber-reinforced

摘要: The understanding of compressive and tensile behaviors of polypropylene fiber-reinforced cemented paste backfill (FR-CPB) play crucial roles in the successful implementation of reinforcement technique in underground mine backfilling operations. However, very limited studies have been performed to gain insight into the evolution of compressive and tensile behaviors and associated mechanical properties of FR-CPB under various curing temperatures from early to advanced ages. Thus, this study aims to investigate the time (7, 28, and 90 d)- and temperature (20°C, 35°C, and 45°C)-dependence of constitutive behavior and mechanical properties of FR-CPB. The obtained results show that pre- and post-failure behaviors of FR-CPB demonstrate strongly curing temperature-dependence from early to advanced ages. Moreover, the pseudo-hardening behavior is sensitive to curing temperature, especially at early ages. Furthermore, the mechanical properties including elastic modulus, material stiffness, strengths, brittleness, cohesion, and internal friction angle of FR-CPB show increasing trends with curing temperature as curing time elapses. Additionally, a predictive model is developed to capture the strong correlation between compressive and tensile strength of FR-CPB. The findings of this study will contribute to the successful implementation of FR-CPB technology.

Fabrication of recyclable Fe chelated aminated polypropylene fiber for efficient clean-up of phosphate

摘要: Herein, a Fe3+-loaded aminated polypropylene fiber has been reported as an efficient phosphate adsorbent. The remarkable phosphate removal ability of the fiber is due to Fe3+ immobilization, and it demonstrates a maximum adsorption capacity of 33.94 mg·P·g–1. Adsorption experiments showed that the fiber is applicable over a wide pH range from 2 to 9. Furthermore, the adsorption kinetics and isotherm data were consistent with the pseudo-second-order and Langmuir adsorption models, respectively. The adsorption equilibrium of the fiber for phosphate was reached within 60 min, indicating an efficient monolayer chemisorption process. Moreover, the adsorbent maintained prominent phosphate removal in the presence of competitive ions such as NO3 and Cl, exhibiting high selectivity. More importantly, the fiber demonstrated excellent reusability (5 times) and low adsorption limit below 0.02 mg·P·g–1. In addition, the phosphate removal efficiency of the fiber can exceed 99% under continuous flow conditions. The adsorption mechanism was studied by X-ray photoelectron spectroscopy, showing that the adsorption of phosphate on the fiber mainly depended on the chemical adsorption of the modified Fe3+. Overall, this study proves that the fiber possesses many advantages for phosphate removal, including high adsorption efficiency, lower treatment limit, good recyclability, and environmental friendliness.
